Every cup at Knight & Rose is built at the bar, in front of you. Espresso is pulled to order and never held; milk is steamed by hand for each drink rather than in batches. It is a slower way to run a coffee bar, and it is the whole reason the room smells the way it does.
A year of adjusting, for one latte.
The Rose Silk Latte is the drink people describe when they try to explain Knight & Rose to someone else — rose, espresso and steamed milk, finished with dried petals. It took a year of adjusting the ratio before it went on the board.
The Spanish Latte is what most people order second: sweeter, lightly spiced, and the reason a lot of afternoons here run longer than planned. The Mocha Emerald layers pistachio cream over chocolate, and is the one guests photograph before they drink it.

Espresso Noir, macchiato, americano and the Ivory Crest Cappuccino with its foam crest — available in caramel, hazelnut, vanilla or rose. The affogato pours espresso straight over vanilla ice cream, which is the most ordered dessert in the room that is not on the dessert list.
