The powder is sifted before it is whisked, which is the step most places skip and the reason a matcha ends up grainy. It is whisked with water first, then built onto milk and ice — or onto purée, for the Fusions, poured slowly enough that the layers hold.

Knight & Rose Café is on the second floor at 236 Queen Street South in Streetsville, Mississauga, open daily from noon. The matcha bar runs the whole time the café is open, until midnight — and until 1 AM from Friday to Sunday.
